I was walking around and as I was entering a new region, I got booted. Then when I tried to relog, I get "error loading region" or something like that. I've done the re-updating thing... I'm on a Mac, OS X.
I can't even log in to play my character?
What gives? Did I go somewhere I wasn't supposed to?

There are some problems with crossing sectors in some maps, especially on Macs. Best is to find a gm on irc and ask them to restore your character.

By finding a GM on irc, how would we do this? I'm in the same situation, and don't know how to get onto irc without loading the map.

IRC (internet relay chat) is network of connected servers allowing you to talk to others, and is not connected to the game. You need an IRC client program (for example kvirc, mirc, or chatzilla). You have to specify the network. Planeshift uses freenode (irc.freenode.net). You have to chose a nickname, and then go to channel #planeshift-gmtalk where you should find some gms.

Edit: Also I don't know what exactly your system specs are, but you might want to check out [ this bug report (http://www.hydlaa.com/flyspray_upgrade/index.php?do=details&task_id=2171) ] and see if it can be of use in your case. Take a look at the additional comments about closing ;).
