The way I've always played it, once a character has made the proper devotion to their Deity of choice, there is established some link between that character and the Deity. This link can gain or lose strength in relationship to the strength of that character's faith and their devoutness.

[ ]no [X]yes, see answer above. Maybe I should add this to the wishlist, but I would like to see a system like the magic way system in which a character can train their devoutness to a deity. It's just a sketch of an idea for now, but this way someone who has gained a high favor of talad could be less susceptible to the wrath of laanx.
* How much do the beliefs of specific religions influence Yliakum's general laws? I'm thinking about this specifically as pertains to the Iron Hand, since Laanx is supposed to be particularly attractive to politicians and other elite.
Iiiii don't have enough information to answer this. That's a good question for the settings department though.
* Is any form of polytheism possible? Or are all the gods of the jealous, 'you'll worship only ME' disposition when it comes to their followers?
It's possible I would think, considering the Gods are real entities in this universe. Most followers of Talad or Xiosia I think would be in favor of a harmony between the gods, while Dakkru, Laanx, Black Flame would not.
* Which god actually has the most followers overall throughout Yliakum, anyway?
In my understanding of the settings, either Talad or Laanx, and maybe moreso Laanx over Talad. In actuality amongst the PC population, it's most likely Xiosia or Talad.
