Well it\'s a good idea, but hard to implement, well actually pretty hard to implement.
Our fighting system is a very generic RP one click, stand in one position watch the outcome. But how are flying creatures supposed to stand still in mid air? So for flying fight we would need an more arcade like fighting style like in gothic. So when you want to attack some one you would have to fly in his direction position your lance and so. BTW. About the jumping of in last moment thing: The impulse wouldnt change that much you would be squished to mouse ? chocolate even if you jump off
But the problem is when flyers have that combat system, non flyers would feel it\'s unfair (which it actually is) do before speaking about mounted combat you should speak about combat in general.
Another way of course would be the KOTOR style, where you give the command and the character moves there and attacks. So you click attack and the character dives at the enemy pointing the lance (for instance) automatically.
But I personally would preffer the arcade style.
