Which of the files from previous versions are safe to copy over to the new clients filespace? How much of the old shortcuts and whatnot is it possible to salvage or does everything need to be redone by hand?

you should be safe to copy over all but controls but there is no gurantee what is copied will work

You'll also have to re-assign keys to your shortcuts, if you had that.

I suppose that means that the keybindings for the copied shortcuts will likely need to be reset if they even show up in the game.
Also I suppose they need to be copied into the .PlaneShift directory in the users home directory or the equivalent depending on the OS.

I copied the controls.xml file over.  The only thing you have to realize is the following two lines
    <bind action="Autorun" key="r" />
    <bind action="MouseRun" key="" />

should now be ...Move instead of ...run.  Do that and it should be ok.  Can't say I've had any problems yet.
