So the winner was the Kikiri meat plate, separately cooked to make the meat both tender and crisp. The gravy was presented made of Lake Mushrooms; this is considered advanced cooking due to their poison. But Night Mushrooms will do just as well, this variant will be published in an official cook book.
I just wonder, that description could match the new "Savory Kikiri Stew" (grilled kikiri chunks with spiced night mushrooms), however, you also mentioned carrots.
